About the Proprietor
Robert Taylor, proprietor of Blue Lacy Café, is a proud San Antonio native whose life has been shaped by service, discipline, and community. A retired U.S. Army veteran of 13 years, Robert honorably served two combat tours, exemplifying dedication, resilience, and leadership throughout his military career.
During his time in the Army, Robert earned distinction as a Fort Bliss Combatives Champion, a testament to his commitment to excellence and mastery of the warrior ethos. He has since built an extensive career as a Combatives, Grappling, Striking, MMA, and Self-Defense Instructor and Coach, training individuals of all backgrounds with a focus on confidence, discipline, and personal growth.
At Blue Lacy Café, Robert brings the same values that guided his military and coaching career, integrity, hard work, and respect for others, creating a welcoming space rooted in community, strength, and authenticity.
The café’s name honors the Texas Blue Lacy dog, the official State Dog of Texas. First bred in the mid-1800s, the Blue Lacy is known for its loyalty, intelligence, and strong connection with people. It was bred to work side-by-side with humans, dependable in tough conditions and gentle within the community.
